- 1 large head cauliflower
- 1 yellow onion
- 1 chopped clove garlic
- 200 ml whipped cream
- black pepper
- cayenne pepper
- fresh herbs
- truffle or olive oil
- Cut cauliflower and onion into chunks add salt and thyme leaves and boil in 200 ml water 10-15 minutes.
- Use a hand held blender and blend until smooth.
- Then add whipped cream, pepper and chopped garlic and head until simmer.
- Serve garnished with fresh herbs for your choice and truffle or olive oil and enjoy with baguette or any your favourite bread.
